How many times have you had a major sugar craving, only to find that there's not a single cookie or candy bar in the house? That's not actually a problem in our house because I keep that stuff stocked like the Willie Wonka Factory (y'all know my sweet tooth!) but for most people, this is sadly a common occurrence. There's nothing worse than craving something sweet only to find that you can't satisfy that need without getting in the car and driving to the nearest convenience store. Unless, of course, you're familiar with the most ingenious invention ever, the mug cake.
Mug cakes are the perfect serving for one and have all the deliciousness of a regular cake without the lengthy baking time. These tasty little treats are cooked up in a quick sixty seconds in the microwave. I'm telling you, genius. I can't take credit for the idea because I didn't think of it, but I do fully support and stand behind anything that's this easy and decadent.

- 1/2 cup + 2 tablespoons all-purpose flour
- 3 tablespoons sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 cup milk, at room temperature
- 2 tablespoons butter, melted & cooled
- 1/2 teaspoon vanilla
For layering/topping:
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
Directions:
- In a small bowl, whisk together flour, sugar, baking powder, and cinnamon until thoroughly, completely combined, with no streaks of any ingredients remaining. Blend in milk, butter, and vanilla until batter is smooth. Into a 14-ounce (or larger) microwave-safe mug, scoop a big spoonful of batter, then sprinkle with a spoonful of cinnamon sugar. Alternate layers, ending with cinnamon sugar. Microwave on high for 1 to 1 1/2 minutes, or until cake is done to your liking. Allow to cool for a couple of minutes before serving.
